High Shear Temper
Aasted’s HighShear system is built for tempering chocolate, compound, and fillings — even with challenging ingredients like nuts, crisps, or other inclusions. It features supercooling and seeding in the first step, followed by reheating in the second step. The system includes a shell-and-tube heat exchanger in the Pre-treat zone (Zone P), and crystallization zones (Zones 1–2) with vertical scrapers.

The High Shear configuration includes a Pre-treat zone equipped with a shell-and-tube heat exchanger.
Crystallization Zones 1–2 — Vertical Scrapers
The system uses vertical scrapers in Zones 1 and 2, with supercooling and seeding carried out in two steps.

User-friendly interface
The most simple and user-friendly interface ever made for a tempering machine.
While other tempering machines have complicated to use interface, our new patented software has a user-friendly and intuitive one. With the new software, it is effortless to adjust the exit temperature and the temper index separately. The user interface is developed for users by users and is specially produced by Aasted for the chocolate industry.
